Can i reheat bearnaise sauce
Or alternatively, we have a large number of guests due for dinner and we want to plan ahead of time. You should absolutely stand over your Bearnaise sauce while warming too, to ensure it does not curdle.
It is not a good idea to attempt to reheat Bearnaise Sauce in the microwave. This sauce is at risk of breaking when exposed to high heat and needs continuous whisking to prevent separation too. If you are going to attempt reheating in the microwave, then first and foremost, you will need a low setting. Leftover Bearnaise sauce can be used on a variety of dishes or stored away in an airtight container in the fridge. However, this sauce does not last long and is generally best made from fresh.
Steak, fish, chicken, eggs such as with eggs benedict , vegetables like brocolli , potato salad; these are all great uses for Bearnaise. Perhaps create a side dish, or starter, if you are having guests or want to elevate your meal a little. Bearnaise sauce does keep, but not very well or for very long. Put about an inch 2. In a separate small saucepan, combine the wine, vinegar and shallots and boil down until the mixture reduces to about 2 tablespoons — this takes about 3 minutes.
Strain through a sieve into the top of the double boiler, thus removing the shallots. Add the lemon juice. Turn the heat down to low under the bottom of the double boiler. Place the top half with the wine-vinegar reduction over the warm water. Add the butter and stir until it melts. Add the egg yolks, stirring constantly until the sauce starts to thicken.
This is the time to be careful — if you go too fast, the sauce can turn into scrambled eggs! Forums New posts Search forums.

I have a wonderful recipe for Bearnaise Sauce. But the recipe makes a lot of sauce, and I end of throwing so much of it away.
I heard Bearnaise Sauce cannot be refrigerated. Is this still true? I tried to reduce the recipe, but it just doesn't taste the same. Anybody know if you can save the sauce for another day? It is not so much that it can't be refrigerated but how to reheat without breaking.
